What's Cookin' Wednesday

I got this recipe from my friend Andrea, who told me this was a Weight Watcher recipe. Hmmmm . . . I had my doubts about that so I added a few things to the instructions.


Weight Watcher Corn Chowder



Ingredients:


2 bacon slices

1 lb. boneless chicken breast - cooked and cut into pieces

1 cup diced onion

1 cup diced red pepper

2 garlic cloves - minced

4 1/2 cups chicken broth

1 3/4 cup peeled, diced potatoes

2 1/4 cups corn


1/2 cup flour


2 cups milk


2 cups shredded cheddar cheese

salt + pepper


Cook the bacon in a frying pan. Set aside the cooked bacon but keep the grease.


Fry the onion, red pepper, and garlic in the bacon grease, then beg your hips for forgiveness.

In a soup pot, combine the above mixture with the chicken broth.

Add the diced potatoes, corn, and chicken and simmer 15 minutes or until potatoes are soft.


You have 15 minutes here - don't be lazy - do some side leg lifts and sit ups.

Place flour in a medium sized bowl and wisk in milk. (Do a little dance while wisking to burn off some calories. C'mon, put your hips into to it.)


Add to soup and cook 15 minutes longer while jogging in place.

Add cheese and stir, flexing your biceps.

Crumble the bacon on top and serve.


Makes 8 one cup servings - or if you're like me - 4 two cup servings.

**When you're done stuffing your face, go ride the exercise bike rigorously for about 2-4 hours. Now you can legitimately call this a Weight Watcher recipe.**

MY HIPS DON'T LIE.
